Happy Valentines Day!
This is what we had for breakfast, and it was darn good! I would have to say these were some of the best pancakes I've ever made. The batter is thicker than regular ones, but they turn out so fluffy so resist the urge to add more liquid!
Blueberry Syrup
1 (slightly overflowing) cup pure maple syrup
1 cup frozen blueberries
Combine in a small saucepan and simmer until slightly reduced, about 15 minutes. Remove from heat, cool, pour into sealable container (or jar) and refrigerate until ready to use.
Buttermilk Pancakes
2 cups all purpose flour
2 tbsp sugar
2 tsp baking powder
1 1/2 tsp baking soda
1 3/4 cups buttermilk
2 eggs
Mix together all dry ingredients, set aside. In a separate bowl whisk together eggs and buttermilk. Add to dry ingredients and whisk to combine (it's ok if there's few lumps). In a pan over mediumish heat add a little butter/oil/non-stick spray, whatever you prefer. Pour batter onto pan and allow to cook until the tops look matte and all the bubbles have popped. Flip and allow other side to cook. Remove from pan, set aside, keep warm and repeat with reamaining batter. Place a few on a plate, top with blueberry syrup and enjoy!
