Simple

Sometimes the best dinners are the simplest ones. Although today was a beautiful and sunny, it was still quite cool with the breeze. So tonight was Lemon, Onion and Thyme roast chicken. In my eyes, perfect comfort food.


Roast Chicken


1 whole chicken (whatever size you want) - 1 large sweet onion, cut into slices - 1 lemon, cut into slices- several sprigs of thyme - olive oil - salt and pepper

Preheat oven to 400°F. In a roasting pan slightly larger than your bird, place a layer of onions. Rinse your chicken under cool water, pat dry with paper towels and place on top of onions. Drizzle with olive oil over bird and sprinkle with salt and pepper. Lay sprigs of thyme over breasts and cover with slices of lemon. Roast chicken for approximately 1 hour - 1.5 hours or until temperatures reach 180°F. Allow to rest for 10 minutes before carving.
