My Mom, sister and two nephews came to visit just shorty after Mother's Day and I made the a nice light lunch for them. My sis can be a little picky sometimes so when I make things for her I try to push it just a little to see what she'll eat. And today I hit a jackpot! So much she even asked me for a recipe! Woot! A super simple Asparagus Tart wowed her!
I was at the groceries store and got two good sized bunches of asparagus for about $1.50. How could I go wrong?! Grabbed some wonderful all butter puff pastry, would have attempted my own but didn't have time, and used the cheddar from home. Next to some baby spinach with a lemony dressing, it was a perfect light lunch.
Simple Asparagus Tart
puff pastry ( i used a pre-rolled 10x10 sheet) - 2 tbsp melted butter - 1 cup grated cheddar cheese - 1 1/2 bunch of asparagus spears, trimmed (to whatever length you desire) - salt and pepper
Allow puff dough to defrost overnight if possible or take it out of fridge and set on counter at least 1 hour before making the tart. Preheat oven to 400°F. Unroll dough, keeping it on the parchment, and place onto your baking sheet. Without cutting right through, score a border about 1/2 inch from the edge all the way around the dough. Brush entire surface with melted butter, season inside square with salt and pepper and then sprinkle 3/4 of the cheese over the inside of the square. Arrange asparagus spears over the cheese in whatever pattern you choose. Sprinkle remaining cheese over spears and bake for approximately 25 minutes or until dough is golden and spears are tender. Can be served warm or a room temperature.
