I love breakfast. Cereal, toast, eggs, it doesn't matter. But my favourite would have to be poached eggs with a whole wheat English muffin. Unfortunately, I don't always have the patience to poach eggs. So usually I convince the breakfast cook at work to do it for me on my odd morning shift at the hotel. At home I opted for my second fav - Granola. However, I'm not a fan of alot of commerically produced granola because I find they used coconut oil in them and I am not a fan. So I make my own, and I have it with plain yogurt. It's a pretty easy recipe and it can easily be changed to suit anyone preference of nut/fruit combination.
My Favourite Granola
4 cups rolled oats, not instant - 1 cup sliced, untoasted almonds - 1/2 cup liquid honey - 1/3 cup oil - 1 tbsp vanilla extract - 1 cup dried cherries - 1/2 cup dried blueberries - 1/2 cup golden raisins
Preheat oven to 325°F. In a large bowl mix oats and almonds, set aside. In small saucepan mix honey, oil and extract. Warm over low heat. Once warm pour over oats and stir to coat. Pour oats on to two baking sheets and spread out evenly. Bake in oven for about 20 - 25 minutes, rotating and stirring at least once, until golden. Keep an eye on it towards the end because it can burn quickly. Remove from oven and allow to cool. In a large bowl dump in granola and mix in dried fruits, put into an airtight container. Enjoy!
